Lunches:
In the summer since it is so hot (especially in the south) I like to keep it light and cool. Sandwiches are a go to lunch meal around here. Salads are the other lunch we have often. I don't like heating up my kitchen in the summer and I am betting neither do most of you. So here are some of my favorite sandwiches and salads. Salads are a great way to use up left over meat from the night before as well.

Dinners:
Since heating up the kitchen in the summer is not fun, here are some cool ideas for hot summer nights. The crock pot is my favorite tool in the kitchen for summer nights. It is such a favorite that I have three different ones. It is not uncommon for me to have two or even all three going to keep from heating up the kitchen. If you do not have a crock pot, you should get one (or three). They are greaat not only for the summer, but for working parents they are great since you can put all the ingredients in there in the morning and have dinner when you get home. Wal-mart has several different ones for reasonable prices. My other favorite kitchen tool in the summer is the toaster/convection oven. I can cook small amounts in it without heating up the entire kitchen/house.
